Medicinal Use

Great for brain health – It contains two compounds (hericenones and erinacines) that stimulate brain growth, reduce symptoms of memory loss, and prevent neural damage caused by amyloid-beta plaques (which occur during Alzheimer’s disease) lion’s mane is your go-to brain food.

Ingredients

  • Lion’s Mane Mushroom
  • Olive Oil
  • Butter (optional)
  • Salt & Pepper

Method

  • Cut the lion’s mane mushroom into half-inch thick slices.
  • Fry the mushroom slices in a dry frying pan (without oil) over medium heat for 5 minutes.
  • The mushroom will reduce in size as moisture evaporates and the fibers are condensed.
  • Add some olive oil & butter and fry until golden & crisp.
  • Enjoy with salt, pepper, and the condiments of your choice.

Ingredients

  • Lion’s Mane Mushroom
  • Egg
  • Panko Breadcrumbs
  • Mayonaise 
  • Worcestershire Sauce
  • Old Bay Seasoning
  • Dijon Mustard
  • Parsley
  • Salt and Pepper
  • Oil (to fry): Canola, Vegetable, or Olive Oil
  • Lemon Wedges (garnish)

Method

  • Hand shred mushrooms into small pieces resembling the texture of flakey crab.
  • In a large bowl, combine egg, mayonnaise, onion, Worcestershire sauce, old bay seasoning, Dijon mustard, parsley (finely chopped), salt and pepper. Mix until fully incorporated.
  • Mix in mushroom until fully incorporated.
  • Mix in Panko breadcrumbs until fully incorporated.
  • Form mixture into 3-4 equal size round flat patties (about ½ to ¾ inch thick).
  • Heat oil in a sauté pan on medium/high heat.
  • Cook patties for approximately 2-3 minutes per side. They should be golden brown and cooked throughout.
  • Add optional garnish, squeeze of lemon and enjoy!
